Chicken, Spinach & Mushroom Low-Carb Bake 🍗🍄🥬

Ingredients:

• 2 lbs boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces

• 2 tbsp olive oil or butter

• 3 cloves garlic, minced

• 1 small onion, diced

• 8 oz mushrooms, sliced

• 3 cups fresh spinach

• 1 cup heavy cream

• ½ cup cream cheese, softened

• ½ cup grated Parmesan cheese

• 1 cup shredded mozzarella cheese

• 1 tsp Italian seasoning

• ½ tsp paprika

• Salt & pepper to taste

• ¼ tsp red pepper flakes (optional, for a little heat)

Instructions:

1. Preheat Oven: Set to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2. Sauté Chicken: In a large skillet, heat 1 tbsp olive oil over medium heat. Add chicken, season with salt, pepper, and paprika, and cook until browned. Remove and set aside.
