Here’s a comforting and classic Chicken Noodle Soup recipe that’s perfect for any day!

Ingredients:

• 1 tbsp olive oil

• 1 small onion, diced

• 2 carrots, sliced

• 2 celery stalks, sliced

• 3 cloves garlic, minced

• 8 cups chicken broth

• 2 cups cooked shredded chicken (rotisserie works great)

• 1 tsp dried thyme

• 1 tsp dried parsley

• 1/2 tsp black pepper

• 1/2 tsp salt (adjust to taste)

• 2 cups egg noodles

• 1 tbsp lemon juice (optional, for brightness)

Instructions:

1. Sauté the veggies – In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté for 4-5 minutes until softened. Add garlic and cook for another minute.

2. Add broth & chicken – Pour in the chicken broth, then add the shredded chicken, thyme, parsley, salt, and pepper. Bring to a boil.

3. Cook the noodles – Add the egg noodles and cook for 6-8 minutes until tender.

4. Finish & serve – Stir in lemon juice (if using), taste for seasoning, and serve hot!

Optional Additions:

• A bay leaf while simmering (remove before serving)

• Fresh parsley for garnish
