Cherry Mash Truffles

Cherry Mash Truffles are a delightful homemade confection inspired by the classic Cherry Mash candy. These truffles feature a creamy cherry-flavored center enveloped in a rich chocolate and peanut coating. Here’s a simple recipe to create approximately 25 truffles:

Ingredients:

For the Cherry Filling:

• 1/4 cup unsalted butter, softened

• 3 cups powdered sugar

• 3 teaspoons cherry flavoring or cherry emulsion

• 2 tablespoons milk

• 1/4 teaspoon red food coloring (optional)

For the Chocolate Coating:

• 12 ounces semi-sweet chocolate

• 2 teaspoons coconut oil

• 1/4 cup chopped peanuts

Instructions:

1. Prepare the Cherry Filling:

• In a mixing bowl, combine the softened butter and 1 cup of powdered sugar; mix until well combined.

• Add another cup of powdered sugar followed by the milk; mix thoroughly.

• Incorporate the remaining powdered sugar, cherry flavoring, and red food coloring (if using); mix until the mixture is smooth and uniform.

2. Form the Cherry Centers:

• Using a small cookie scoop or spoon, portion out small balls of the cherry mixture and place them onto a parchment-lined baking sheet.

• Once all the mixture has been shaped into balls, transfer the baking sheet to the freezer and chill for at least 2 hours, or until the cherry centers are firm.

3. Prepare the Chocolate Coating:

• In a microwave-safe bowl, melt the semi-sweet chocolate and coconut oil together in 30-second intervals, stirring after each, until the mixture is smooth.

• Stir in the chopped peanuts until evenly distributed.

4. Coat the Truffles:

• Working in batches, dip each frozen cherry center into the chocolate-peanut mixture, ensuring it is fully coated.

• Place the coated truffles back onto the parchment-lined baking sheet.

• Once all truffles are coated, return them to the freezer to set.

5. Serve and Store:

• After the chocolate coating has hardened, the truffles are ready to be enjoyed.

• Store any leftovers in an airtight container in the refrigerator.
