Cheesy Chicken Patties
Ingredients:
- 2 cups cooked chicken, finely chopped or shredded
- 1/2 cup breadcrumbs (plain or panko)
- 1/2 cup shredded cheddar or mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 eggs
- 2 tbsp mayonnaise (or sour cream)
- 2 tbsp fresh parsley, chopped (plus extra for garnish)
- 1 clove garlic, minced (optional)
- 1/2 tsp paprika
- Salt and pepper, to taste
- 2 tbsp vegetable oil, for frying
Instructions:
- Prepare the Mixture:
- In a large bowl, combine the cooked chicken, breadcrumbs, shredded cheese, Parmesan cheese, eggs, mayonnaise, parsley, garlic, paprika, salt, and pepper. Mix until well combined and holds together.
- Shape the Patties:
- Form the mixture into small patties, about 2-3 inches wide. Press gently to ensure they hold their shape.
- Heat the Oil:
- Heat vegetable oil in a large skillet over medium heat.
- Cook the Patties:
- Place the patties in the skillet, ensuring they are not overcrowded. Fry for 3-4 minutes on each side, or until golden brown and crispy.
- Drain and Garnish:
- Transfer the patties to a plate lined with paper towels to drain excess oil. Garnish with additional parsley.
- Serve:
- Enjoy warm as an appetizer, side dish, or main course with a dipping sauce like ranch, aioli, or marinara.
