Cheesy Chicken Patties

Ingredients:

  • 2 cups cooked chicken, finely chopped or shredded
  • 1/2 cup breadcrumbs (plain or panko)
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 eggs
  • 2 tbsp mayonnaise (or sour cream)
  • 2 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1 clove garlic, minced (optional)
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp vegetable oil, for frying

Instructions:

  1. Prepare the Mixture:
    • In a large bowl, combine the cooked chicken, breadcrumbs, shredded cheese, Parmesan cheese, eggs, mayonnaise, parsley, garlic, paprika, salt, and pepper. Mix until well combined and holds together.
  2. Shape the Patties:
    • Form the mixture into small patties, about 2-3 inches wide. Press gently to ensure they hold their shape.
  3. Heat the Oil:
    • Heat vegetable oil in a large skillet over medium heat.
  4. Cook the Patties:
    • Place the patties in the skillet, ensuring they are not overcrowded. Fry for 3-4 minutes on each side, or until golden brown and crispy.
  5. Drain and Garnish:
    • Transfer the patties to a plate lined with paper towels to drain excess oil. Garnish with additional parsley.
  6. Serve:
    • Enjoy warm as an appetizer, side dish, or main course with a dipping sauce like ranch, aioli, or marinara.
