Ingredients

  • 1 lb (450g) chicken breast or thighs, finely chopped or ground
  • 1 cup shredded mozzarella cheese (or cheddar)
  • 2 large eggs
  • 3 tbsp mayonnaise
  • 3 tbsp all-purpose flour (or almond flour for a low-carb option)
  • 2 tbsp fresh parsley, finely chopped (or 1 tsp dried parsley)
  • 1/2 tsp garlic powder

1/2 tsp paprika (optional, for a smoky flavor)

  • Salt and black pepper to taste
  • 2–3 tbsp olive oil or vegetable oil (for frying)

Instructions

1. Prepare the Chicken Mixture:

  1. In a large bowl, combine the finely chopped chicken, shredded cheese, eggs, mayonnaise, and parsley.
  2. Add the flour, garlic powder, paprika, salt, and black pepper. Mix until well combined. The mixture should hold together but still be slightly sticky.

2. Shape the Fritters:

  1. Use a spoon or your hands to scoop out portions of the mixture. Shape them into small patties or fritters (about 2–3 inches wide).

3. Cook the Fritters:

  1. Heat the oil in a large skillet over medium heat.
  2. Place the fritters in the skillet, leaving space between them. Cook for 3–4 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).

4. Drain and Serve:

  1. Remove the fritters from the skillet and place them on a plate lined with paper towels to remove excess oil.
  2. Serve warm with your favorite dipping sauce (like ranch, garlic aioli, or sour cream).

Tips:

  • For extra flavor, add chopped green onions or grated Parmesan cheese to the mixture.
  • If you prefer baking, place the fritters on a parchment-lined baking sheet and bake at 375°F (190°C) for 20–25 minutes, flipping halfway through.
