Ingredients
• 1 lb ground beef
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 packet (or 2 tbsp) taco seasoning
• 1 can (10 oz) Rotel tomatoes with green chilies, drained
• 2 cups beef broth
• 1 ½ cups milk
• 8 oz (about 2 ½ cups) uncooked pasta (elbow, penne, or shells)
• 2 cups shredded cheddar cheese
• ½ cup shredded Monterey Jack cheese (or more cheddar)
• ½ cup sour cream (optional, for extra creaminess)
• 1 tbsp olive oil
• Salt & pepper to taste
• Fresh cilantro or green onions, for garnish (optional)
Instructions
1. Cook the Beef & Aromatics:
1. In a large skillet or pot, heat olive oil over medium-high heat.
2. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease if needed.
3. Stir in onion and garlic. Cook for 2-3 minutes until softened.
