Cheesy Asparagus Casserole

This cheesy asparagus casserole is creamy, flavorful, and the perfect side dish for any meal!

Ingredients:

• 1 lb (450g) fresh asparagus, trimmed and cut into 2-inch pieces

• 1 cup shredded cheddar cheese

• ½ cup grated Parmesan cheese

• 1 cup heavy cream (or milk for a lighter version)

• 2 tbsp butter

• 2 cloves garlic, minced

• ½ tsp salt

• ½ tsp black pepper

• ½ tsp paprika (optional, for extra flavor)

• ½ cup breadcrumbs (optional, for a crispy topping)

Instructions:

1. Preheat oven to 375°F (190°C). Grease a baking dish.

2. Blanch the asparagus: Boil water in a pot, add asparagus, and cook for 2 minutes. Drain and set aside.

3. Make the cheese sauce: In a pan, melt butter over medium heat. Add garlic and sauté until fragrant. Stir in heavy cream, cheddar cheese, Parmesan cheese, salt, pepper, and paprika. Stir until melted and smooth.

4. Assemble the casserole: Place asparagus in the greased baking dish. Pour the cheese sauce over it.

5. Add toppings: Sprinkle breadcrumbs and extra cheese on top.

6. Bake for 15-20 minutes until bubbly and golden brown.

7. Serve & enjoy!
