Old-Fashioned Bologna Salad Recipe

Ingredients:

  • 1 pound bologna (ring or chunk-style, not slices)
  • 2 hard-boiled eggs
  • 1/4 to 1/2 cup sweet pickles or sweet pickle relish
  • 1/2 small onion (optional)
  • 1/2 to 3/4 cup mayonnaise
  • 1 tablespoon yellow mustard
  • Salt and pepper to taste

Instructions:

  1. Grind the bologna, hard-boiled eggs, pickles, and onion (if using) using a food grinder or pulse in a food processor until finely chopped but not pureed.
  2. Transfer to a mixing bowl.
  3. Add mayonnaise and mustard, mixing until you reach your desired creaminess.
  4. Season with salt and pepper to taste.
  5. Chill in the fridge for at least an hour to let the flavors blend.
  6. Serve as a sandwich filling or with crackers.

Tips:

  • You can use dill pickles instead of sweet for a tangier version.
  • Some folks add a splash of pickle juice or a dash of hot sauce for extra flavor.
