Blackberry Cobbler Recipe
A classic, sweet, and juicy dessert with a buttery crust—perfect with a scoop of vanilla ice cream!
Ingredients:
For the Filling:
• 4 cups fresh blackberries (or frozen, thawed & drained)
• ½ cup granulated sugar
• 1 tbsp lemon juice
• 1 tbsp cornstarch (helps thicken the filling)
For the Cobbler Topping:
• 1 cup all-purpose flour
• ¾ cup granulated sugar
• 1 ½ tsp baking powder
• ½ tsp salt
• ¾ cup milk
• ½ cup (1 stick) unsalted butter, melted
• 1 tsp vanilla extract
Instructions:
Step 1: Preheat & Prep
1. Preheat oven to 375°F (190°C).
2. Grease a 9×9-inch baking dish with butter or non-stick spray.
Step 2: Prepare the Blackberry Filling
1. In a bowl, mix blackberries, sugar, lemon juice, and cornstarch.
2. Let sit for 10 minutes while preparing the batter.
Step 3: Make the Cobbler Batter
1. In a separate bowl, whisk together flour, sugar, baking powder, and salt.
2. Add milk, melted butter, and vanilla extract, stirring until smooth.
Step 4: Assemble & Bake
1. Pour the batter evenly into the baking dish.
2. Spoon the blackberry mixture on top—do not stir!
3. Bake for 40-45 minutes, or until golden brown and bubbly.
Step 5: Serve & Enjoy!
• Let cool for 10 minutes before serving.
• Serve warm with vanilla ice cream or whipped cream.
