Best Ever Easy Vegetable Beef Soup
Ingredients:
- 1 lb ground beef (or stew meat)
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 (14 oz) can diced tomatoes (undrained)
- 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 2 cups potatoes, peeled and diced
- 1 tsp dried thyme
- 1 tsp dried basil
- Salt and pepper, to taste
- 1 tbsp olive oil
Instructions:
- Cook the Beef:
- In a large pot over medium heat, heat olive oil. Add the ground beef and diced onion.
