Ingredients
For the Chicken Skewers:
- 2 boneless, skinless chicken breasts (cut into bite-sized chunks)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp cayenne pepper (optional, for extra heat)
- 8 wooden skewers (soaked in water for 30 minutes)
For the Bang Bang Sauce:
- ½ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp honey
- 1 tbsp Sriracha (adjust to taste)
- 1 tsp rice vinegar
- ½ tsp garlic powder
Instructions
- Marinate the Chicken
- In a bowl, mix olive oil, garlic powder, smoked paprika, salt, pepper, and cayenne (if using).
- Toss the chicken pieces in the seasoning mix and let marinate for at least 15-30 minutes.
- Make the Bang Bang Sauce
- In a small bowl, whisk together mayo, sweet chili sauce, honey, Sriracha, rice vinegar, and garlic powder.
- Set aside.
- Assemble & Cook the Skewers
- Thread the marinated chicken onto the skewers.
- Grill or Bake:
- Grill: Preheat to medium-high heat and grill for 10-12 minutes, turning occasionally.
- Oven: Preheat to 400°F (200°C) and bake for 15-18 minutes, broiling for the last 2 minutes for char.
- Coat with Sauce & Serve
- Brush or drizzle the Bang Bang sauce over the skewers.
- Garnish with chopped cilantro or green onions (optional).
