Bang Bang Chicken Skewers

Ingredients

For the Chicken Skewers:

  • 2 boneless, skinless chicken breasts (cut into bite-sized chunks)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper (optional, for extra heat)
  • 8 wooden skewers (soaked in water for 30 minutes)

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp honey
  • 1 tbsp Sriracha (adjust to taste)
  • 1 tsp rice vinegar
  • ½ tsp garlic powder

Instructions

  1. Marinate the Chicken
    • In a bowl, mix olive oil, garlic powder, smoked paprika, salt, pepper, and cayenne (if using).
    • Toss the chicken pieces in the seasoning mix and let marinate for at least 15-30 minutes.
  2. Make the Bang Bang Sauce
    • In a small bowl, whisk together mayo, sweet chili sauce, honey, Sriracha, rice vinegar, and garlic powder.
    • Set aside.
  3. Assemble & Cook the Skewers
    • Thread the marinated chicken onto the skewers.
    • Grill or Bake:
      • Grill: Preheat to medium-high heat and grill for 10-12 minutes, turning occasionally.
      • Oven: Preheat to 400°F (200°C) and bake for 15-18 minutes, broiling for the last 2 minutes for char.
  4. Coat with Sauce & Serve
    • Brush or drizzle the Bang Bang sauce over the skewers.
    • Garnish with chopped cilantro or green onions (optional).
  5. Enjoy!
    • Serve with rice, a fresh salad, or extra sauce for dipping!
