Banana Pecan French Toast Casserole
Ingredients:
For the Casserole:
- 1 loaf of French bread or brioche, cut into 1-inch cubes
- 4 ripe bananas, sliced
- 1/2 cup chopped pecans
- 6 large eggs
- 2 cups milk (whole milk or a mix of milk and heavy cream)
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Pinch of salt
For the Topping:
- 1/4 cup unsalted butter, melted
- 1/3 cup brown sugar
- 1/2 cup chopped pecans
- Additional banana slices (optional)
Instructions:
- Prepare the Bread Base:
- Grease a 9×13-inch baking dish.
- Place the cubed bread into the dish, layering with banana slices and pecans.
- Make the Custard:
- In a large bowl, whisk together eggs, milk, brown sugar, vanilla extract, cinnamon, nutmeg, and salt.
- Pour the custard mixture evenly over the bread, ensuring it’s well soaked.
- Cover and refrigerate for at least 2 hours or overnight for best results.
- Preheat and Prepare the Topping:
- Preheat your oven to 350°F (175°C).
- In a small bowl, mix melted butter, brown sugar, and pecans. Spoon this mixture over the soaked bread.
- Bake:
- Bake uncovered for 35-40 minutes, or until the top is golden and the casserole is set.
- Optional Garnish:
- Add fresh banana slices and drizzle with maple syrup or a dusting of powdered sugar before serving.
