Banana Foster Pudding

Here’s a delicious Banana Foster Pudding recipe that combines the rich flavors of bananas, caramel, and creamy pudding.

Ingredients

For the Banana Foster Topping:

• 3 ripe bananas, sliced

• ½ cup (1 stick) unsalted butter

• ¾ cup brown sugar

• ½ teaspoon cinnamon

• ¼ cup dark rum (optional)

• 1 teaspoon vanilla extract

• ¼ cup heavy cream

For the Pudding:

• 2 cups whole milk

• 1 cup heavy cream

• ½ cup granulated sugar

• 3 tablespoons cornstarch

• ¼ teaspoon salt

• 4 large egg yolks

• 1 teaspoon vanilla extract

• 1 tablespoon unsalted butter

For Assembly:

• 1 box vanilla wafers or ladyfingers

• Whipped cream (for topping)

• Toasted pecans or walnuts (optional)

Instructions

1. Make the Banana Foster Topping:

1. In a skillet over medium heat, melt butter. Add brown sugar and cinnamon, stirring until combined.

2. Add sliced bananas and cook for 2 minutes until they begin to soften.

3. Pour in the rum (if using), carefully tilt the pan to ignite (optional), or cook until alcohol evaporates.

4. Stir in vanilla and heavy cream. Remove from heat and let cool.

2. Make the Pudding:

1. In a saucepan, whisk together milk, heavy cream, sugar, cornstarch, and salt over medium heat.

2. In a separate bowl, whisk egg yolks. Gradually temper them by adding a small amount of the hot milk mixture while whisking.

3. Slowly pour the tempered yolks back into the saucepan, whisking constantly. Cook until thickened (about 5 minutes).

4. Remove from heat, add vanilla and butter, and stir until smooth. Let cool slightly.
