Banana Bread Cookies

Ingredients:

  • 1 ripe banana, mashed
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup chocolate chips (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the mashed banana, egg, and vanilla extract, mixing well until combined.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
  4. Combine wet and dry mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  5. Add add-ins: Fold in the chopped nuts and chocolate chips if you’re using them.
  6. Scoop the dough: Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
