- 1 lb (450g) cremini or button mushrooms, cleaned and trimmed
- 3 tbsp balsamic vinegar
- 2 tbsp soy sauce
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp honey or maple syrup (optional, for a hint of sweetness)
- 1/2 tsp black pepper
- 1/2 tsp dried thyme (or 1 tsp fresh thyme)
- 1/4 tsp red pepper flakes (optional, for a little heat)
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the marinade: In a bowl, whisk together balsamic vinegar, soy sauce, garlic, olive oil, honey (if using), black pepper, thyme, and red pepper flakes.
- Toss the mushrooms: Add the mushrooms to the bowl and toss until they’re well coated in the marinade. Let them sit for 5–10 minutes if you have time.
- Roast: Spread the mushrooms in a single layer on the prepared baking sheet. Roast for 20–25 minutes, stirring halfway through, until they are caramelized and tender.
- Garnish & serve: Remove from the oven, sprinkle with fresh parsley, and serve warm as a side dish or topping for steaks, pasta, or grain bowls.
