Ingredients

For the Casserole:

  • 1 (16-ounce) package frozen potato and cheese pierogies (or your preferred flavor)
  • 1 pound ground beef, ground pork, or sausage (optional, for a meaty version)
  • 1 medium onion, diced
  • 1 tablespoon butter
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup heavy cream or milk
  • 2 cloves garlic, minced
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh chives or parsley, chopped (optional, for garnish)

Instructions

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Prepare the Meat (if using):
    • In a large skillet, cook the ground meat over medium heat until browned. Remove and set aside.
    • In the same skillet, melt the butter and sauté the onion until soft and translucent. Add minced garlic and cook for 1 more minute.
  3. Prepare the Sauce:
    • In a mixing bowl, combine sour cream, heavy cream, half of the shredded cheddar cheese, paprika, salt, and pepper. Stir until smooth.
  4. Assemble the Casserole:
    • Spread a small amount of the sour cream mixture on the bottom of the baking dish.
    • Arrange half of the frozen pierogies in a single layer over the sauce.
    • Sprinkle half the cooked meat (if using) and sautéed onions over the pierogies.
    • Pour half of the sauce evenly over the layer.
    • Repeat with the remaining pierogies, meat, onions, and sauce.
  5. Add the Cheese:
    • Sprinkle the remaining cheddar cheese over the top of the casserole.
  6. Bake:
    • Cover the dish with aluminum foil and bake for 20 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve:
    • Remove from the oven and let cool for 5 minutes. Garnish with fresh chives or parsley before serving.

Tips:

  • Vegetarian Option: Skip the meat and add sautéed mushrooms, spinach, or bell peppers for a hearty vegetarian version.
  • Make-Ahead: Assemble the casserole and refrigerate up to 24 hours in advance. Add 10 minutes to the baking time if chilled.
  • Serving Suggestion: Pair this dish with a crisp green salad or roasted vegetables for a balanced meal.

Enjoy the comforting, creamy goodness of this baked pierogi casserole!
