Baked Greek Lemon Chicken
Ingredients:
- 4 bone-in, skin-on chicken thighs (or breasts if preferred)
- 3 tbsp olive oil
- Juice of 2 lemons
- 4 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp thyme (optional)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional for color)
- 1 lemon, sliced
- Fresh parsley or dill for garnish (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- Make marinade: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, pepper, and paprika.
- Marinate chicken: Place chicken in a baking dish or ziplock bag. Pour marinade over it and coat well. Let it marinate for at least 30 minutes (or up to 8 hours in the fridge for deeper flavor).
- Arrange in baking dish: Place the chicken in a single layer in a baking dish. Pour extra marinade over the top. Add lemon slices on top or around the chicken.
- Bake: Bake uncovered for 35–45 minutes, or until the chicken is golden and cooked through (internal temp of 165°F/74°C). Baste once or twice with the juices during baking.
