Baked Apple Fritters
Ingredients:
2 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup milk
2 large eggs
1 teaspoon vanilla
2 tablespoons melted butter
1 1/2 cups diced apples (about 2 medium apples)
For the Glaze:
1 cup powdered sugar
2-3 tablespoons milk
1/2 teaspoon vanilla
Directions:
1. First things first, preheat your oven to 350 degrees F and line a baking sheet with parchment paper. You want that inviting smell wafting through your home!
2. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
3. In a separate bowl, combine the milk, eggs, vanilla, and melted butter until smooth and creamy.
4. Gently fold the wet mixture into the dry ingredients, and when it’s nearly combined, add in those delicious diced apples.
5. Use a spoon to drop mounds of this heavenly batter onto your baking sheet, shaping them into cute little rounds.
6. Bake for 15 to 18 minutes. They are ready when they’re golden and a toothpick comes out clean!
7. While they are baking, whip up the glaze by mixing the powdered sugar, milk, and vanilla until it’s beautifully smooth.
8. Once your fritters are cool, drizzle or dip them in that sweet glaze and let it set before serving.
