Amish Cinnamon Bread (No Yeast, Quick Version)
This version of Amish Cinnamon Bread is soft, sweet, and perfect with coffee!
Ingredients:
For the Batter:
• 2 cups all-purpose flour
• 1 cup granulated sugar
• 1 tsp baking soda
• ½ tsp salt
• 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar, let sit 5 min)
• 1 egg
• ¼ cup vegetable oil
• 1 tsp vanilla extract
For the Cinnamon Sugar Swirl:
• ⅓ cup granulated sugar
• 1 tsp cinnamon
Instructions:
1. Preheat Oven – Set to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. Mix Dry Ingredients – In a large bowl, whisk flour, sugar, baking soda, and salt.
3. Mix Wet Ingredients – In another bowl, mix buttermilk, egg, oil, and vanilla.
4. Combine – Stir wet ingredients into dry until just combined. Do not overmix.
5. Layer the Batter – Pour half of the batter into the loaf pan. Sprinkle half of the cinnamon sugar mixture. Add remaining batter and top with the rest of the cinnamon sugar. Swirl with a knife.
6. Bake – Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
7. Cool & Serve – Let cool for 10 minutes before slicing.
