Amish Baked Custard Recipe

Ingredients:

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 cups whole milk (warmed slightly)
  • Ground nutmeg (for sprinkling on top)

Instructions:

  1. Preheat Oven: Preheat your oven to 325°F (163°C).
  2. Prepare Custard Mixture:
    • In a medium mixing bowl, whisk the eggs until smooth.
    • Gradually add the sugar and salt, whisking until combined.
    • Stir in the vanilla extract.
    • Slowly pour the warm milk into the egg mixture, whisking continuously to prevent curdling.
  3. Prepare for Baking:
    • Pour the custard mixture into individual ramekins or a large baking dish.
    • Sprinkle a light layer of ground nutmeg on top.
  4. Create a Water Bath:
    • Place the ramekins or dish in a deep baking pan.
    • Carefully pour hot water into the pan until it reaches about halfway up the sides of the custard dish(es).
  5. Bake:
    • Bake for 40-50 minutes (for ramekins) or up to 1 hour (for a larger dish), or until the custard is set but still slightly jiggly in the center.
    • A knife inserted near the center should come out clean.
  6. Cool and Serve:
    • Remove the custard from the water bath and let it cool to room temperature.
    • Chill in the refrigerator for at least 2 hours before serving.

Tips:

  • For a smoother texture, strain the custard mixture through a fine mesh sieve before pouring it into the baking dish.
  • Serve plain or with a drizzle of caramel or a dollop of whipped cream.
