Amish Apple Fritter Bread

Ingredients:

For the batter:

  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/3 cup oil (vegetable or canola)
  • 1/3 cup milk
  • 2 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1¾ tsp baking powder
  • 1/2 tsp salt

For the apple layer:

  • 2 large apples, peeled and chopped (use Granny Smith or Honeycrisp)
  • 2 tsp cinnamon
  • 2 tbsp sugar

For the glaze (optional):

  • 1/2 cup powdered sugar
  • 1–2 tbsp milk
  • 1/4 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Prepare apple mixture: In a small bowl, mix the chopped apples with cinnamon and sugar. Set aside.
  3. Make batter:
In a large bowl, whisk together eggs, both sugars, oil, milk, and vanilla.
Add flour, baking powder, and salt. Stir just until combined (don’t overmix).
  4. Assemble layers:
    • Pour half the batter into the pan.
    • Add half the apple mixture.
    • Pour the remaining batter over.
    • Top with the rest of the apples. Press them lightly into the batter.
  5. Bake for 55–60 minutes, or until a toothpick inserted comes out clean. If browning too quickly, cover loosely with foil at 40 minutes.
  6. Cool completely, then drizzle with glaze (optional).
  7. Glaze: Mix powdered sugar, milk, and vanilla until smooth, then drizzle over the cooled loaf.
