Here’s a simple, healthy, and absolutely delicious zucchini bread recipe — moist, naturally sweet, and packed with good-for-you ingredients. Perfect for breakfast or a snack!

Healthy & Delicious Zucchini Bread

Ingredients:

  • 2 eggs
  • 1/3 cup honey or maple syrup
  • 1/3 cup olive oil or melted coconut oil
  • 1/2 cup plain Greek yogurt (or unsweetened applesauce)
  • 1 tsp vanilla extract
  • 1 1/2 cups grated zucchini (no need to peel, squeeze lightly if very wet)
  • 1 1/2 cups whole wheat flour (or all-purpose or gluten-free blend)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1/4 tsp salt
  • 1/2 cup chopped nuts or dark chocolate chips (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Mix wet ingredients: In a large bowl, whisk eggs, honey/maple syrup, oil, yogurt, and vanilla until smooth.
  3. Add zucchini: Stir in grated zucchini.
  4. Add dry ingredients: Sprinkle flour, baking soda, baking powder, cinnamon, nutmeg, and salt over the wet mixture. Stir just until combined.
  5. Optional add-ins: Fold in nuts or chocolate chips if using.
  6. Pour into pan and smooth the top.
  7. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan 10 minutes, then transfer to a rack to cool completely.
