Six Minute Caramels

Absolutely! Here’s a quick and tasty recipe for Six-Minute Microwave Caramels — rich, chewy, and perfect for a fast sweet treat.

Six-Minute Caramels (Microwave Recipe)

Ingredients:

  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup light corn syrup
  • 1/2 cup brown sugar (light or dark)
  • 1/2 cup granulated sugar
  • 1/2 cup sweetened condensed milk
  • 1/2 tsp vanilla extract
  • Pinch of salt (optional, or sprinkle sea salt on top after)

Instructions:

  1. Prepare pan: Line an 8×8 inch dish with parchment paper or lightly grease it.
  2. Combine ingredients: In a large microwave-safe bowl, add butter, corn syrup, brown sugar, white sugar, and sweetened condensed milk.
  3. Microwave: Cook on high for 6 minutes, stirring every 2 minutes. (Use oven mitts — bowl gets very hot!)
    • Note: All microwaves vary — test a small drop in cold water after 6 minutes. If it forms a soft ball, it’s ready. For firmer caramels, you can add 30–60 more seconds.
  4. Add vanilla: Carefully stir in vanilla (and pinch of salt if using).
  5. Pour & set: Pour into your prepared dish and let cool completely (about 1 hour at room temp or 20 minutes in the fridge).
  6. Cut & wrap: Slice into squares and wrap in wax paper if desired.
