Ingredients:

  • 2 lbs (about 5 medium) russet or Yukon gold potatoes, peeled and thinly sliced
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk (whole milk preferred)
  • 1/2 cup heavy cream (or use more milk)
  • 1 1/2 cups shredded cheese (cheddar, Gruyère, or a mix)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: pinch of nutmeg or thyme
  • Extra cheese for topping (about 1/2 cup)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×9 or similar baking dish.
  2. Make the sauce:
    • In a saucepan, melt butter over medium heat.
    • Add garlic and cook for 30 seconds.
    • Whisk in flour and cook for 1 minute.
    • Slowly whisk in milk and cream.
    • Add salt, pepper, and optional nutmeg/thyme.
    • Cook until slightly thickened, then stir in 1 1/2 cups cheese until melted and smooth.
  3. Layer the potatoes:
    • Layer half the sliced potatoes in the baking dish.
