Baked Greek Lemon Chicken

Baked Greek Lemon Chicken

Ingredients:

  • 4 bone-in, skin-on chicken thighs (or breasts if preferred)
  • 3 tbsp olive oil
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp thyme (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional for color)
  • 1 lemon, sliced
  • Fresh parsley or dill for garnish (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Make marinade: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, pepper, and paprika.
  3. Marinate chicken: Place chicken in a baking dish or ziplock bag. Pour marinade over it and coat well. Let it marinate for at least 30 minutes (or up to 8 hours in the fridge for deeper flavor).
  4. Arrange in baking dish: Place the chicken in a single layer in a baking dish. Pour extra marinade over the top. Add lemon slices on top or around the chicken.
  5. Bake: Bake uncovered for 35–45 minutes, or until the chicken is golden and cooked through (internal temp of 165°F/74°C). Baste once or twice with the juices during baking.
  6. Finish & serve: Garnish with fresh parsley or dill, and serve with rice, roasted potatoes, or a Greek salad.
