Cheesy Ground Beef & Rice Casserole

Ingredients:

  • 1 lb (450g) ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked white rice (or 2.5–3 cups cooked)
  • 2 cups beef broth (or water + bouillon)
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1 cup milk
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1/2 teaspoon paprika (optional)
  • Salt and pepper to taste
  • Optional: chopped parsley or green onions for garnish

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.
  2. Cook the beef:
    In a large skillet, brown ground beef with onion over medium heat until fully cooked. Add garlic, cook 1 more minute. Drain excess fat.
  3. If using uncooked rice:
    Stir uncooked rice into the beef mixture along with broth, cream soup, milk, 1 cup of cheese, paprika, salt, and pepper.
  4. Pour into casserole dish and cover tightly with foil.
  5. Bake:
    Bake for 50–55 minutes (or until rice is tender). Remove foil, sprinkle remaining 1/2 cup cheese on top, and bake uncovered for 5–10 minutes until bubbly and golden.

If using pre-cooked rice:

  • Cut baking time to 25–30 minutes and reduce liquid slightly (use about 3/4 cup broth).
  1. Garnish with parsley or green onions if desired. Serve hot!
