- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup uncooked white rice (or 2.5–3 cups cooked)
- 2 cups beef broth (or water + bouillon)
- 1 can (10.5 oz) cream of mushroom or cream of chicken soup
- 1 cup milk
- 1 1/2 cups shredded cheddar cheese (divided)
- 1/2 teaspoon paprika (optional)
- Salt and pepper to taste
- Optional: chopped parsley or green onions for garnish
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.
- Cook the beef:
In a large skillet, brown ground beef with onion over medium heat until fully cooked. Add garlic, cook 1 more minute. Drain excess fat. - If using uncooked rice:
Stir uncooked rice into the beef mixture along with broth, cream soup, milk, 1 cup of cheese, paprika, salt, and pepper. - Pour into casserole dish and cover tightly with foil.
- Bake:
Bake for 50–55 minutes (or until rice is tender). Remove foil, sprinkle remaining 1/2 cup cheese on top, and bake uncovered for 5–10 minutes until bubbly and golden.
If using pre-cooked rice:
- Cut baking time to 25–30 minutes and reduce liquid slightly (use about 3/4 cup broth).
- Garnish with parsley or green onions if desired. Serve hot!
