Sweet Alabama Pecan Bread

Ingredients:

  • 1 cup light brown sugar, packed
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup vegetable oil (or melted butter for extra richness)
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans (toast them for more flavor)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Mix wet ingredients:
    In a large bowl, whisk together the sugars, eggs, oil, and vanilla until smooth and combined.
  3. Add dry ingredients:
    Stir in the flour and salt just until incorporated — don’t overmix.
  4. Fold in the pecans.
  5. Bake:
    Pour the batter into the prepared pan and spread evenly. Bake for 30–35 minutes or until golden brown and a toothpick comes out clean (don’t overbake — you want it moist!).
