Ingredients

For the crust:

  • 2 cups graham cracker crumbs (or Golden Oreos for extra flavor)
  • 1/2 cup unsalted butter, melted
  • 2 tbsp sugar

For the cheesecake filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup heavy cream

For the strawberry topping:

  • 2 cups fresh strawberries, chopped
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water

For the strawberry crunch topping:

  • 1 cup Golden Oreos (or vanilla wafers)
  • 1/4 cup freeze-dried strawberries
  • 3 tbsp melted butter
  • Optional: 2 tbsp strawberry gelatin mix for extra flavor and color

Instructions

1. Make the crust:

  • Preheat oven to 325°F (163°C).
  • Mix graham cracker crumbs, sugar, and melted butter.
  • Press into the bottom of a 9-inch springform pan.
  • Bake for 10 minutes. Let cool.

2. Make the cheesecake filling:

  • Beat cream cheese and sugar until smooth.
  • Add eggs one at a time, then mix in vanilla, sour cream, and heavy cream until combined.
  • Pour over crust. Smooth the top.

3. Bake the cheesecake:

  • Place springform pan in a water bath (wrap the bottom in foil to prevent leaks).
  • Bake at 325°F for 55-65 minutes or until center is almost set.
  • Turn off oven, crack the door, and let cheesecake sit inside for 1 hour.
  • Chill at least 4 hours or overnight in fridge.

4. Make the strawberry topping:

  • In a saucepan, combine strawberries, sugar, and lemon juice over medium heat.
  • Cook until strawberries break down slightly.
  • Stir in cornstarch slurry. Cook until thickened. Let cool.

5. Make the strawberry crunch:

  • Crush Oreos and freeze-dried strawberries in a food processor.
  • Add melted butter and optional gelatin mix.
  • Sprinkle over the cooled cheesecake, pressing lightly to adhere.

6. Assemble:

  • Spread strawberry topping over the chilled cheesecake.
  • Add strawberry crunch on top or around the edges.
