Slow Cooker Cheesy Mozzarella Chicken


Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (24 oz) jar marinara sauce (or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (optional, for garnish)
  • Cooked pasta, rice, or crusty bread (for serving)

Instructions:

  1. Season the Chicken:
    Place the chicken breasts in the slow cooker. Season with garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. Add Sauce:
    Pour the marinara sauce over the chicken, making sure it’s evenly coated.
  3. Cook:
    Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  4. Add Cheese:
    Once the chicken is cooked, sprinkle the shredded mozzarella and Parmesan cheese over the top. Cover and cook for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    Garnish with fresh basil if desired. Serve over cooked pasta, rice, or with crusty bread for dipping.

Tips:

  • For extra flavor, you can brown the chicken in a skillet before adding it to the slow cooker.
  • Add a layer of spinach or sautéed mushrooms for a veggie boost.
  • If you prefer a creamier sauce, stir in 1/4 cup of heavy cream or cream cheese before adding the cheese topping.
