Strawberry Tiramisu Recipe

Ingredients (Serves 6-8)

  • For the Strawberry Layer:
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • For the Cream Filling:
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • For Assembly:
  • 1 cup strawberry puree (blend fresh strawberries with a little sugar)
  • 1 package (about 24) ladyfinger cookies (savoiardi)
  • Fresh strawberries for garnish
  • Optional: Mint leaves for decoration

Instructions

  1. Prepare the Strawberry Layer:
  • In a bowl, mix the sliced strawberries, sugar, and lemon juice. Let it sit for 15-20 minutes to macerate and release juices.
  1. Make the Cream Filling:
  • In a large bowl, whisk the mascarpone cheese until smooth.
  • In a separate bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
  • Gently fold the whipped cream into the mascarpone until fully combined.
  1. Prepare the Strawberry Puree:
  • Blend fresh strawberries with a little sugar until smooth. Strain if you prefer a smoother texture.
  1. Assemble the Tiramisu:
  • Dip each ladyfinger into the strawberry puree briefly (don’t soak them too much, or they’ll become soggy).
  • Arrange a layer of dipped ladyfingers at the bottom of your serving dish.
  • Spread half of the cream filling over the ladyfingers.
  • Add a layer of macerated strawberries on top of the cream.
  • Repeat with another layer of dipped ladyfingers, cream filling, and strawberries.
  • Finish with a final layer of cream.
  1. Chill:
  • Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  1. Serve:
  • Before serving, garnish with fresh strawberry slices and mint leaves if desired.
  • Dust with powdered sugar for an extra touch.
