Forgotten Chicken is a classic, easy, no-fuss meal where everything bakes together slowly, resulting in tender, flavorful chicken and rice. It’s called “Forgotten Chicken” because you mix the ingredients, pop it in the oven, and “forget” about it while it cooks.
Forgotten Chicken Recipe
Ingredients:
• 2 cups long-grain white rice (uncooked)
• 1 can (10.5 oz) cream of mushroom soup
• 1 can (10.5 oz) cream of chicken soup
• 2 cups chicken broth (or water)
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon paprika (optional, for color)
• ½ teaspoon black pepper
• 1 teaspoon salt (adjust to taste)
• 4-6 boneless, skinless chicken breasts (or thighs)
• 1 packet Lipton Onion Soup Mix
• 2 tablespoons butter (melted)
Instructions:
1. Preheat Oven:
• Set oven to 350°F (175°C).
2. Prepare the Rice Base:
• In a greased 9×13-inch baking dish, mix together the uncooked rice, cream of mushroom soup, cream of chicken soup, chicken broth, garlic powder, onion powder, paprika, salt, and pepper.
3. Add the Chicken:
• Place the chicken breasts on top of the rice mixture.
• Sprinkle the Lipton Onion Soup Mix evenly over the chicken.
• Drizzle with melted butter for extra flavor.
4. Cover & Bake:
• Cover the dish tightly with aluminum foil (this helps the rice cook properly).
• Bake for 1 hour 30 minutes.
• Do not peek! Keeping the foil sealed helps the rice absorb the liquid properly.
5. Check & Serve:
• After 90 minutes, remove from oven and check if the rice is tender and the chicken is cooked through (internal temp should be 165°F).
• If needed, bake uncovered for an extra 10 minutes to slightly crisp the top.
6. Enjoy!
• Let it sit for 5 minutes, then serve warm.

• More Flavor: Add ½ cup of shredded cheddar cheese on top before serving.
• Veggie Addition: Mix in 1 cup of frozen peas & carrots before baking.
