Here’s a Twix Cookie recipe that combines a buttery shortbread base, rich caramel, and smooth chocolate—just like the classic Twix bar!

Ingredients

For the Shortbread Cookies:

• 1 cup (226g) unsalted butter, softened

• ½ cup (100g) granulated sugar

• 2 cups (250g) all-purpose flour

• ½ teaspoon salt

• 1 teaspoon vanilla extract

For the Caramel Layer:

• 1 cup (320g) dulce de leche or

• 20 soft caramel candies + 2 tablespoons heavy cream

For the Chocolate Layer:

• 1 ½ cups (270g) milk chocolate or semi-sweet chocolate, chopped

• 1 teaspoon vegetable oil (for shine and smoothness)

Instructions

1. Make the Shortbread Cookies:

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a mixing bowl, beat the butter and sugar until light and fluffy. Add vanilla.

3. Mix in the flour and salt until a dough forms.

4. Roll out the dough to about ¼ inch (6mm) thick and cut into circles or rectangles.

5. Place on the prepared baking sheet and bake for 10-12 minutes, or until edges are lightly golden.

6. Let cool completely before adding the caramel.

2. Prepare the Caramel Layer:

• If using dulce de leche, spread a thin layer over each cooled cookie.

• If using caramel candies, melt them with the heavy cream over low heat until smooth. Spread onto the cookies.

• Let the caramel set for about 15 minutes.

3. Coat with Chocolate:

1. Melt the chocolate with vegetable oil in a microwave (in 30-second intervals) or over a double boiler.

2. Dip the caramel-coated cookies into the melted chocolate or drizzle chocolate on top.

3. Let them set at room temperature or refrigerate for faster setting.
