Ingredients:
• 12 oz (340g) elbow macaroni
• 4 tablespoons (½ stick) unsalted butter
• ¼ cup all-purpose flour
• 3 cups whole milk
• 1 cup heavy cream
• ½ teaspoon salt
• ½ teaspoon black pepper
• ½ teaspoon garlic powder (optional)
• ½ teaspoon paprika (optional, for color and flavor)
• 2 ½ cups shredded sharp cheddar cheese
• 1 cup shredded mozzarella cheese
• ½ cup grated Parmesan cheese
Topping:
• 1 cup panko breadcrumbs
• 2 tablespoons melted butter
• ¼ teaspoon paprika
Instructions:
1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. Cook pasta according to package instructions until al dente. Drain and set aside.
3. Make the cheese sauce:
• In a large saucepan, melt butter over medium heat.
• Whisk in flour and cook for 1–2 minutes (until golden).
• Slowly whisk in milk and heavy cream, stirring constantly until thickened (about 3–4 minutes).
• Add salt, pepper, garlic powder, and paprika.
4. Add cheese: Remove from heat and stir in cheddar, mozzarella, and Parmesan until smooth.
5. Combine pasta & sauce: Mix the cooked macaroni with the cheese sauce and transfer to the baking dish.
6. Prepare the topping: Mix panko breadcrumbs with melted butter and paprika, then sprinkle over the mac and cheese.
7. Bake for 20 minutes or until golden and bubbly.
8. Rest for 5 minutes before serving.
