Fudgy Brownie Muffin

Ingredients:

• 1 cup (225g) unsalted butter

• 1 cup (180g) semi-sweet chocolate chips

• 1 cup (200g) granulated sugar

• ½ cup (100g) brown sugar

• 3 large eggs

• 1 teaspoon vanilla extract

• ¾ cup (95g) all-purpose flour

• ¼ cup (25g) unsweetened cocoa powder

• ½ teaspoon salt

• ½ teaspoon baking powder

Instructions:

1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.

2. Melt butter & chocolate: In a microwave-safe bowl, melt butter and chocolate chips together in 30-second bursts, stirring between each until smooth. Let cool slightly.

3. Mix wet ingredients: Whisk in both sugars, eggs, and vanilla until smooth.

4. Combine dry ingredients: In a separate bowl, whisk flour, cocoa powder, salt, and baking powder.

5. Fold the dry ingredients into the chocolate mixture until just combined. Do not overmix.

6. Fill muffin cups about ¾ full.

7. Bake for 18–22 minutes, or until the tops are shiny and slightly cracked, and a toothpick comes out with a few moist crumbs.

8. Cool for 10 minutes before removing from the tin.
