Crockpot Creamy  Potato & Hamburger Soup

Here’s a simple and delicious Crockpot Creamy Potato & Hamburger Soup recipe!

Ingredients:

• 1 lb ground beef (hamburger)

• 4 cups diced potatoes (russet or Yukon gold)

• 1 small onion, chopped

• 2 cloves garlic, minced

• 3 cups beef broth

• 1 can (10.5 oz) cream of mushroom soup

• 1 cup milk or heavy cream

• 1 cup shredded cheddar cheese

• 1/2 tsp salt (or to taste)

• 1/2 tsp black pepper

• 1/2 tsp paprika (optional)

• 1/2 tsp dried thyme (optional)

Instructions:

1. Brown the Ground Beef – In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.

2. Add Ingredients to Crockpot – In a slow cooker, add the diced potatoes, onion, garlic, beef broth, and cooked beef. Stir to combine.

3. Slow Cook – Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until potatoes are tender.

4. Make It Creamy – Stir in the cream of mushroom soup, milk (or cream), and shredded cheese. Mix well and cook for another 20-30 minutes until warmed through.

5. Serve & Enjoy – Taste and adjust seasoning if needed. Serve hot with crusty bread or crackers!
