Lazy Day Oatmeal Cake

Here’s a Lazy Day Oatmeal Cake recipe—simple, moist, and packed with flavor!

Ingredients

For the Cake:

• 1 cup old-fashioned rolled oats

• 1 ¼ cups boiling water

• ½ cup unsalted butter, softened

• 1 cup granulated sugar

• 1 cup brown sugar, packed

• 2 large eggs

• 1 tsp vanilla extract

• 1 ½ cups all-purpose flour

• 1 tsp baking soda

• ½ tsp salt

• 1 tsp cinnamon

• ¼ tsp nutmeg (optional)

For the Topping:

• ½ cup unsalted butter, melted

• ½ cup brown sugar, packed

• ¼ cup heavy cream (or milk)

• ½ tsp vanilla extract

• 1 cup shredded coconut

• ½ cup chopped pecans or walnuts (optional)

Instructions

Step 1: Prepare the Oatmeal

1. In a bowl, pour the boiling water over the oats. Let sit for 10-15 minutes until softened.

Step 2: Make the Cake Batter

1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

2. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.

3. Add eggs one at a time, beating well after each addition. Stir in vanilla.

4. In another bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.

5. Add the dry ingredients to the wet ingredients, mixing just until combined.

6. Stir in the softened oats.

7. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.

Step 3: Prepare the Topping

1. While the cake bakes, mix melted butter, brown sugar, heavy cream, vanilla, coconut, and nuts in a bowl.

2. When the cake is done, remove it from the oven and turn on the broiler.

3. Spread the topping over the warm cake.

4. Broil for 2-3 minutes until bubbly and lightly browned. Watch carefully to avoid burning!

Step 4: Cool & Serve
