Here’s a simple and delicious Cheesy Ground Beef and Rice Casserole recipe—hearty, comforting, and easy to make!
Ingredients:
• 1 lb ground beef
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 teaspoon paprika
• 1 teaspoon Italian seasoning (optional)
• 1 cup uncooked white rice (long-grain)
• 2 cups beef broth (or water)
• 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
• 1 (14.5 oz) can diced tomatoes, drained
• 1 1/2 cups shredded cheddar cheese
• 1/2 cup milk
• 1 tablespoon butter
Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Cook the beef: In a large skillet over medium heat, cook the ground beef and onion until browned (about 5 minutes). Drain excess fat, then stir in garlic, salt, pepper, paprika, and Italian seasoning.
3. Mix ingredients: Add uncooked rice, beef broth, cream of mushroom soup, diced tomatoes, and milk to the skillet. Stir well.
4. Transfer & bake: Pour the mixture into the prepared baking dish. Cover with foil and bake for 35-40 minutes, until the rice is tender.
5. Add cheese & finish: Remove foil, sprinkle cheddar cheese evenly on top, and return to the oven for 5-10 more minutes until melted and bubbly.
6. Let it rest for 5 minutes before serving. Enjoy!
Optional Add-Ins:
• Add bell peppers, mushrooms, or corn for extra flavor.
• Use Monterey Jack or mozzarella for a different cheese blend.
• Swap white rice for brown rice (increase baking time by 10-15 minutes).
