Old-Fashioned Chocolate Fudge

Here’s a classic old-fashioned chocolate fudge recipe—rich, smooth, and made the traditional way!

Ingredients:

• 2 cups granulated sugar

• 3/4 cup whole milk

• 2 tablespoons unsalted butter

• 1/8 teaspoon salt

• 1 teaspoon vanilla extract

• 4 ounces unsweetened chocolate, chopped (or 2/3 cup cocoa powder)

Instructions:

1. Prepare the pan: Grease an 8×8-inch baking dish or line it with parchment paper.

2. Cook the fudge:

• In a heavy-bottomed saucepan, combine sugar, milk, butter, salt, and chocolate over medium heat.

• Stir constantly until the mixture comes to a boil.

• Once boiling, stop stirring and let it cook until it reaches soft ball stage (234–238°F or 112–114°C) on a candy thermometer (about 5-7 minutes).

3. Cool & beat:

• Remove from heat and let it cool without stirring until it reaches 110°F (43°C) (about 10-15 minutes).

• Add vanilla extract and beat the mixture vigorously with a spoon until it thickens and loses its gloss (about 5-7 minutes).

4. Set the fudge:

• Quickly pour into the prepared pan and smooth the top.

• Let it sit at room temperature until firm (about 2 hours).

5. Cut & enjoy:

• Slice into squares and serve.

Tips for Perfect Fudge:

• Don’t stir while boiling, or sugar crystals will form.

• Use a candy thermometer for accuracy.

• If it hardens too quickly, you may have overcooked it—try adding a bit of warm milk and stirring gently.
