KENTUCKY BUTTER CAKE COOKIES

Ingredients:

  • For the Cookies:
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon butter extract (optional)
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon butter extract (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream Butter and Sugar:
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  1. Add Eggs and Extracts:
  • Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla and butter extracts if using.
  1. Combine Dry Ingredients:
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  1. Mix Together:
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  1. Shape Cookies:
  • Drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

  • In a saucepan, combine the butter, sugar, and water. Bring to a boil over medium heat and let it simmer for about 2-3 minutes. Remove from heat and stir in the vanilla and butter extracts.
  1. Glaze Cookies:
  • Drizzle the warm glaze over the cooled cookies or dip the tops of the cookies into the glaze for extra coating.
  1. Cool and Serve:
    • Allow the glaze to set before serving.
