Ingredients

For the Potatoes:

• 3 large russet potatoes (washed, unpeeled)

• 1 cup all-purpose flour

• 1/2 cup cornstarch (for extra crispiness)

• 1 teaspoon baking powder

• 1 teaspoon paprika

• 1 teaspoon garlic powder

• 1 teaspoon onion powder

• 1 teaspoon salt

• 1/2 teaspoon black pepper

• 1/2 teaspoon cayenne pepper (optional, for a spicy kick)

• 1 cup buttermilk (or substitute with milk + 1 tsp vinegar)

• 1 egg (beaten)

• Oil for frying

Instructions

1. Prepare the Potatoes:

• Wash the potatoes well and cut them into thick, round slices (about 1/4 inch thick).

• Soak them in cold water for 15-20 minutes to remove excess starch, then pat dry.

2. Prepare the Batter & Coating:

• In a bowl, mix buttermilk and egg.

• In another bowl, mix flour, cornstarch, baking powder, and all the spices.

3. Coat the Potatoes:

• Dip each potato slice into the buttermilk mixture, ensuring it’s well coated.

• Dredge it in the flour mixture, pressing gently so the coating sticks.

• Repeat for all slices.

4. Fry the Potatoes:

• Heat oil in a deep pan to 350°F (175°C).

• Fry the coated potato slices in batches, ensuring they don’t overcrowd the pan.

• Cook for 3-5 minutes per side, or until golden brown and crispy.
