Ingredients

Instructions
- Prepare the Dough:
- In a large bowl, mix the flour, salt, and baking powder.
- Add warm water and olive oil; mix until a dough forms.
- Knead on a floured surface for about 5-7 minutes until smooth.
- Cover the dough with a kitchen towel and let it rest for 30 minutes.
- Prepare the Filling:
- In a skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped spinach and green onions, sautéing until the spinach is wilted (about 2-3 minutes).
- Add garlic powder, salt, and pepper to taste. Remove from heat and let it cool slightly.
- Assemble the Flatbread:
- Divide the rested dough into 4 equal balls.
- On a floured surface, roll each ball into a circle about 1/4 inch thick.
- Place a portion of the spinach and green onion mixture in the center of each circle, fold the edges over to enclose the filling, and pinch to seal.
- Cook the Flatbread:
- Heat a non-stick skillet over medium-high heat.
- Lightly oil the skillet if desired.
- Cook each filled flatbread for about 3-4 minutes on each side until golden brown and cooked through.
- Serve:
- Serve warm as a side dish or snack. You can enjoy it with yogurt, tzatziki, or your favorite dipping sauce.
