Spinach and Green Onion Pan Flatbread

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 3/4 cup warm water
  • 2 tbsp olive oil

For the Filling:

  • 2 cups fresh spinach, chopped
  • 1/2 cup green onions, chopped (about 4-5 green onions)
  • 2 tbsp olive oil (for sautéing)
  • 1/2 tsp garlic powder (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the Dough:
  • In a large bowl, mix the flour, salt, and baking powder.
  • Add warm water and olive oil; mix until a dough forms.
  • Knead on a floured surface for about 5-7 minutes until smooth.
  • Cover the dough with a kitchen towel and let it rest for 30 minutes.
  1. Prepare the Filling:
  • In a skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add the chopped spinach and green onions, sautéing until the spinach is wilted (about 2-3 minutes).
  • Add garlic powder, salt, and pepper to taste. Remove from heat and let it cool slightly.
  1. Assemble the Flatbread:
  • Divide the rested dough into 4 equal balls.
  • On a floured surface, roll each ball into a circle about 1/4 inch thick.
  • Place a portion of the spinach and green onion mixture in the center of each circle, fold the edges over to enclose the filling, and pinch to seal.
  1. Cook the Flatbread:
  • Heat a non-stick skillet over medium-high heat.
  • Lightly oil the skillet if desired.
  • Cook each filled flatbread for about 3-4 minutes on each side until golden brown and cooked through.
  1. Serve:
  • Serve warm as a side dish or snack. You can enjoy it with yogurt, tzatziki, or your favorite dipping sauce.

Tips:

  • Feel free to add cheese (like feta or mozzarella) to the filling for extra flavor.
  • This flatbread can be made ahead of time and reheated on a skillet or in the oven.
