Quick and Easy Pan-Fried Corn Fritters Recipe
Ingredients:
• 1 cup corn kernels (fresh, frozen, or canned)
• 1/2 cup all-purpose flour
• 1/4 cup cornmeal (optional, for extra texture)
• 1 large egg
• 1/4 cup milk (or water)
• 2 green onions, finely chopped (optional)
• 1/4 cup shredded cheese (cheddar or mozzarella, optional)
• 1/2 tsp baking powder
• 1/4 tsp salt
• 1/4 tsp black pepper
• A pinch of paprika or chili powder (optional, for spice)
• Oil for frying (vegetable or canola oil)
Instructions:
1. Prepare the Batter:
• In a mixing bowl, whisk together the flour, cornmeal (if using), baking powder, salt, pepper, and any optional spices.
• Add the egg and milk, mixing until smooth.
• Stir in the corn kernels, green onions, and cheese (if using) until well combined.
2. Heat the Pan:
• Heat a skillet over medium heat and add a thin layer of oil.
3. Cook the Fritters:
• Scoop about 2 tablespoons of batter per fritter and drop it onto the hot skillet. Flatten slightly with the back of a spoon.
• Cook for 2–3 minutes on each side, or until golden brown and crispy.
4. Drain and Serve:
