Ingredients:

For the Filling:

  • 6 cups fresh peaches, peeled and sliced (or 2 cans of sliced peaches, drained)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch

For the Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 1/3 cup boiling water

Optional Garnish:

  • Extra cinnamon for sprinkling
  • Vanilla ice cream for serving

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Make the Peach Filling:
    • In a large bowl, combine the peaches, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the peaches are evenly coated.
    • Transfer the peach mixture to the prepared baking dish.
  3. Prepare the Topping:
    • In another bowl, mix together the flour, granulated sugar, brown sugar, baking powder, and salt.
    • Add the cubed butter and use a pastry cutter or your fingers to work it into the dry ingredients until the mixture resembles coarse crumbs.
    • Stir in the boiling water until just combined.
  4. Assemble the Cobbler:
    • Drop spoonfuls of the topping over the peach mixture. Spread it out slightly, but it’s okay if some peaches peek through.
    • Sprinkle extra cinnamon over the top, if desired.
  5. Bake:
    • Bake the cobbler for 40–45 minutes, or until the topping is golden brown and the filling is bubbling.
  6. Serve:
    • Let the cobbler cool for 10–15 minutes before serving. Scoop into bowls and top with a generous scoop of vanilla ice cream.
