Ingredients:

For the Casserole:

  • 1 loaf of French bread or brioche, cut into 1-inch cubes
  • 4 ripe bananas, sliced
  • 1/2 cup chopped pecans
  • 6 large eggs
  • 2 cups milk (whole milk or a mix of milk and heavy cream)
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of salt

For the Topping:

  • 1/4 cup unsalted butter, melted
  • 1/3 cup brown sugar
  • 1/2 cup chopped pecans
  • Additional banana slices (optional)

Instructions:

  1. Prepare the Bread Base:
    • Grease a 9×13-inch baking dish.
    • Place the cubed bread into the dish, layering with banana slices and pecans.
  2. Make the Custard:
    • In a large bowl, whisk together eggs, milk, brown sugar, vanilla extract, cinnamon, nutmeg, and salt.
    • Pour the custard mixture evenly over the bread, ensuring it’s well soaked.
    • Cover and refrigerate for at least 2 hours or overnight for best results.
  3. Preheat and Prepare the Topping:
    • Preheat your oven to 350°F (175°C).
    • In a small bowl, mix melted butter, brown sugar, and pecans. Spoon this mixture over the soaked bread.
  4. Bake:
    • Bake uncovered for 35-40 minutes, or until the top is golden and the casserole is set.
  5. Optional Garnish:
    • Add fresh banana slices and drizzle with maple syrup or a dusting of powdered sugar before serving.
  6. Serve:
    • Serve warm as a delightful breakfast or brunch dish.
