Honey Butter Pecanbread


Ingredients:

For the Bread:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans (toasted for extra flavor)

For the Honey Butter Glaze:

  • 1/4 cup unsalted butter
  • 3 tbsp honey
  • 1/4 cup chopped pecans (optional, for topping)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sweeteners: In a large mixing bowl, beat the softened butter, honey, and brown sugar until light and fluffy. This should take about 2-3 minutes.
  4. Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Combine Wet and Dry Ingredients: Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined—don’t overmix.
  6. Fold in Pecans: Gently fold in the chopped pecans.
  7. Bake: Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Prepare Honey Butter Glaze: While the bread is baking, melt the butter in a small saucepan over low heat. Stir in the honey until fully combined. Optionally, add chopped pecans for an extra crunch. Remove from heat and let cool slightly.
  9. Glaze the Bread: Once the bread is done baking, allow it to cool in the pan for 10 minutes, then transfer to a wire rack. While still warm, brush the top with the honey butter glaze.
  10. Serve: Let the glaze set slightly before slicing. Serve warm or at room temperature for the ultimate sweet and nutty treat.
