Bacon Cheeseburger Meatloaf


Ingredients:

For the Meatloaf:

  • 1 lb ground beef (80/20 preferred)
  • 1 lb ground pork
  • 1 cup breadcrumbs (panko or regular)
  • 1 cup shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 2 large eggs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 6-8 slices bacon

For the Glaze:

  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp yellow mustard
  • 1 tsp Worcestershire sauce

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Mix the Meatloaf: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, cheddar cheese, onion, garlic, ketchup, mustard, Worcestershire sauce, eggs, salt, and pepper. Mix gently with your hands until well combined. Be careful not to overmix, as it can make the meatloaf dense.
  3. Shape and Wrap: Shape the meat mixture into a loaf and place it on the prepared baking sheet. Lay the bacon slices over the top of the loaf, tucking the ends underneath to secure them.
  4. Prepare the Glaze: In a small bowl, whisk together ketchup, brown sugar, mustard, and Worcestershire sauce. Brush half of the glaze over the top of the bacon-covered meatloaf.
  5. Bake: Bake the meatloaf in the preheated oven for 45 minutes. Remove from the oven, brush the remaining glaze over the top, and return to the oven for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute and ensures clean slices.
