Double Chocolate Coca-Cola Cake:

Ingredients:

For the cake:

  • 1 cup Coca-Cola (regular, not diet)
  • 1/2 cup vegetable oil
  • 1/2 cup butter
  • 3 tablespoons cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract

For the frosting:

  • 1/2 cup butter
  • 3 tablespoons cocoa powder
  • 1/4 cup Coca-Cola (regular)
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips (optional)

Instructions:

For the cake:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium saucepan, combine the Coca-Cola, vegetable oil, butter, and cocoa powder. Bring to a boil over medium heat, stirring frequently. Once it reaches a boil, remove from heat and set aside.
  3. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  4. Pour the wet mixture into the dry ingredients and stir until combined.
  5. Add the eggs, sour cream, and vanilla extract. Mix well until smooth and fully incorporated.
  6. Pour the batter into the prepared baking pan.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and allow the cake to cool in the pan while you prepare the frosting.

For the frosting:

  1. In a saucepan, melt the butter over medium heat.
  2. Stir in the cocoa powder and Coca-Cola. Bring to a simmer, and let it cook for 1-2 minutes, stirring constantly.
  3. Remove from heat and whisk in the powdered sugar and vanilla extract until smooth and glossy.
  4. Immediately pour the frosting over the cooled cake, spreading it out evenly.
  5. If desired, sprinkle the top with mini chocolate chips while the frosting is still warm.
