French Apple Custard Cake Recipe


Ingredients

For the Cake:

  • 3 medium apples (e.g., Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 3 large eggs
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (120ml) whole milk
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (60g) unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • Powdered sugar, for dusting

For the Custard Topping:

  • 2 large egg yolks
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (30ml) heavy cream
  • 1/4 teaspoon vanilla extract

Instructions

Prepare the Apples:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Peel, core, and thinly slice the apples. Set aside.

Make the Batter:

  1. In a large mixing bowl, whisk together the eggs and sugar until light and frothy.
  2. Gradually add the milk, cream, melted butter, and vanilla extract, mixing until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon (if using).
  4. Gradually fold the dry ingredients into the wet mixture until a smooth batter forms.

Assemble and Bake:

  1. Pour a small amount of batter into the prepared pan to coat the bottom.
  2. Layer the apple slices evenly over the batter.
  3. Pour the remaining batter over the apples, ensuring they are fully covered.
  4. Bake in the preheated oven for 35–40 minutes, or until the top is set and lightly golden.

Prepare the Custard Topping:

  1. While the cake is baking, whisk together the egg yolks, sugar, cream, and vanilla extract in a small bowl.
  2. Remove the cake from the oven and spread the custard topping evenly over the surface.
  3. Return the cake to the oven and bake for an additional 10–15 minutes, or until the custard is lightly set and golden.

Cool and Serve:

  1. Allow the cake to cool completely in the pan before removing the springform ring.
  2. Dust with powdered sugar before serving.
  3. Slice and enjoy as-is or with a dollop of whipped cream or a scoop of vanilla ice cream.
