Crock Pot Great Northern Beans


Ingredients:

  • 1 pound dried Great Northern beans (rinsed and sorted)
  • 6 cups water or chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon salt (add toward the end of cooking)
  • 1/2 teaspoon black pepper
  • Optional:
    • 1 smoked ham hock or 4 slices of bacon (for added flavor)
    • 1 teaspoon smoked paprika (for a smoky taste)
    • 1/2 teaspoon cayenne pepper (for a spicy kick)

Instructions:

  1. Prep the Beans
    • Place the beans in a large bowl, cover with water, and soak overnight.
    • Alternatively, use the quick soak method: Bring beans to a boil in water, boil for 2 minutes, then remove from heat and let sit for 1 hour. Drain and rinse.
  2. Assemble in the Crock Pot
    • Add the beans, water or chicken broth, diced onion, minced garlic, and bay leaves to the Crock Pot.
    • If using, add the smoked ham hock or bacon for flavor.
  3. Cook the Beans
    • Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the beans are tender.
    • Check occasionally and add more water or broth if needed to keep the beans covered.
  4. Season to Taste
    • Once the beans are tender, remove the bay leaves and the ham hock (if used).
    • Add salt, pepper, and any additional seasonings like paprika or cayenne. Stir well.
  5. Serve
    • Enjoy as a side dish, or serve over rice for a hearty meal.
    • Garnish with fresh parsley or green onions, if desired.

Tips:

  • For a Creamier Texture: Use a wooden spoon to mash some of the beans against the side of the Crock Pot.
  • Leftovers: Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
