Classic Southern Pea Salad

Ingredients:

• 2 cups frozen green peas (or fresh peas), thawed

• 1/2 cup diced red onion

• 1/2 cup diced celery

• 1/2 cup shredded cheddar cheese

• 1/4 cup crumbled cooked bacon (optional)

• 1/4 cup chopped dill pickles (optional, for tanginess)

• 1/2 cup mayonnaise

• 1 teaspoon yellow mustard

• 1 teaspoon apple cider vinegar

• 1 teaspoon sugar (optional, to balance flavors)

• Salt and black pepper to taste

Instructions:

1. Prepare the Peas

If using frozen peas, thaw them by rinsing with cold water. Drain well and pat them dry with a paper towel.

2. Mix the Salad

In a large bowl, combine the peas, red onion, celery, cheddar cheese, and bacon (if using).

3. Make the Dressing

In a small bowl, whisk together the mayonnaise, mustard, apple cider vinegar, and sugar (if desired). Season with salt and pepper to taste.

4. Combine

Pour the dressing over the pea mixture and gently toss until everything is evenly coated.

5. Chill and Serve

Cover and refrigerate for at least 1 hour to let the flavors meld. Serve cold.

Tips:

• Add a sprinkle of paprika or chopped fresh parsley on top for garnish.

• You can substitute Greek yogurt for part of the mayo for a lighter version.

• Adjust the tanginess by adding more vinegar or pickles according to your taste.
